Ingredients
  

  • cups unsalted butter softened
  • 5 cloves garlic finely minced
  • tablespoon fresh parsley finely chopped
  • tablespoon chives  finely chopped
  • tablespoon smoked paprika
  • ¾ tablespoon red pepper flakes
  • 3 tablespoons Dijon mustard
  • 3 tablespoons lemon juice
  • ½ teaspoon Salt
  • ¼ teaspoon black pepper Freshly cracked

Instructions
 

  • Get your ingredients ready: Quality is critical. Choose to use high-quality, fresh herbs & nonsalted butter. Using freshly sourced herbs will reflect the flavor vibrancy in your final product.
  • Herb and Spice Preparation: Preparation of the Herbs and Spices To chop the parsley and chives finely so that they can blend smoothly with each other without overshadowing or clashing with each other! The paprika and red pepper flakes should be fresh, or you won't lose their strength.
  • Mixing the Ingredients: Start with mixing your soft butter with garlic then add whatever herbs and spicing ingredients you like.
  • When these are incorporated add the Dijon and lemon juice, then fold to combine. This critical step imparts a subtle acidity that counteracts the lush nature of the butter.
  • Seasoning: Salt and pepper are more than seasonings; they're flavor enhancers. Lastly, season slowly (and taste as you go) to make sure there is an appropriate amount of seasoning to open the further complexity of herbal notes.
  • Forming the Log: Rolling the mixture into a log on parchment paper helps in even chilling and easy storage. Ensure the log is tight and well-shaped, as this will make slicing much more accessible.
  • Chilling and Setting: Refrigeration allows the flavors to meld together and the butter to harden to a consistency that’s ideal for slicing. This task takes approximately two hours from start to finish.
  • Serving: Slice the chilled butter into thick discs. Place one disc on each steak immediately after grilling. The residual heat will melt the butter, allowing it to coat the steak in a rich, flavorful sauce.
