Prepare Chocolate Molds: Lightly grease your chocolate molds with coconut oil. Once the chocolate has melted, gently coat the inside of each mold with a fine layer. Place the molds in the refrigerator to cool and harden.
Toast Kataifi: While the chocolate shell sets, toast the kataifi pastry in a dry skillet over medium heat, stirring constantly until golden and crispy. This step adds an extra crunch to the chocolate bar.
Make the Filling: In a medium bowl, combine kataifi, pistachio cream, tahini, and a touch of salt. The mixture should be thick yet spreadable. If it’s too dry, add a little more pistachio butter; if it’s too wet, adjust with additional kataifi.
Assemble the Bars: Take the chocolate molds out of the refrigerator. Spoon the mixture into each mold, pressing gently to ensure uniformity, and leave slight space above for the top layer of chocolate.
Top Off with Chocolate: Melt the remaining chocolate and carefully pour it over the filling, making sure that it is completely covered. The filling is pushed over the mold's edge to form an encapsulated layer.
Create the Chocolate Bars. After, you can return the molds to the refrigerator for at least 30 minutes to allow the chocolate time to completely harden.
