Ingredients

  • 2 cans Pineapple chunks Drained (reserve 1/4 cup juice) , 1 can = 20ounce (755.99 g)
  • ½ cup Granulated sugar
  • cup All-purpose flour
  • 2 cups Shredded sharp cheddar cheese
  • 1 sleeve Ritz crackers Crushed (about 40 crackers)
  • ½ cup Salted butter melted

Instructions

  • Preheat the oven: Start by setting your oven to 350°F (175°C). This step is crucial for ensuring the casserole cooks uniformly throughout.
  • Prepare the pineapple base: In a large mixing bowl, combine the drained pineapple chunks, reserved 1/4 cup of pineapple juice, sugar, and flour. Mix thoroughly to ensure the sugar and flour are well incorporated.
  • Add the cheese: Fold in the shredded cheddar cheese. Stir gently to evenly distribute the cheese throughout the pineapple mixture.
  • Transfer to the baking dish: Lightly grease a 9x9-inch casserole dish or equivalent baking dish with cooking spray. Spread the pineapple concoction evenly across the prepared container using a spatula to distribute it uniformly.
  • Prepare the topping: Mix the crushed Ritz crackers with the melted butter in a medium-sized bowl. Use a spoon or your hands to mix until all cracker crumbs are coated in butter.
  • Assemble the casserole: Sprinkle the buttery cracker topping evenly over the pineapple mixture, ensuring full coverage for a crispy top.
  • Bake: Place the baking dish in the preheated oven and let it cook for 30 to 35 minutes. You'll know it's ready when the top layer turns a rich golden color and the contents begin to simmer around the edges.
  • Cool and serve: Once you've taken the casserole out of the oven, let it rest for about 5-10 minutes before you dish it out. You can savor it either hot or at ambient temperature.
